Today, I did the second 20 minute workout on the Bollywood dance blast DVD. It was pretty fun! I'm still getting over a cold so I didn't have as much energy as I'd like.

SLC Bees Game
A couple of months ago, I won four tickets to the SLC Bees game. Of course, I asked if I could get one extra free ticket and the guy was sweet enough to do so. So, I asked Tiffany if she wanted to go.
We made it a "Girls night out."
We did watch the game for a few innings in the beginning and end of the game. And we had some fun on the Bee Express and park. I did miss Eli. He would have loved the train. Oh well! Next year I will need to score some more free tickets. Thanks Tiff for going with me. It was a blast!

Workout Wednesday
This morning I went out of my comfort zone and did the Bollywood Dance Blast DVD. I think this workout was a beginners workout to understand some of the moves they do. There were 2-20 minute fat blasting dance workouts. I did the first 20 minutes since Eli had a bit of a poopy situation. I know...excuse excuse. But, I did the first workout and it was really fun. It actually made me laugh!
It wasn't exactly like the Bollywood dances on the TV show, So you think you can dance. But, you still move to a story. There were shoulder and hip rolls as you wipe away your heavy burdens. My favorite was when we pretended to put on spiritual boots and carry a platter.You will jump, spin and shake. Now, I really want to try the second part of the DVD. I guess you will have to try it out to see what I'm talking about. So, if you get a chance, head over to your library and check it out. It sure will bring a smile to your face.

Last week
Last week, we had THREE play dates. Wahoo! On Tuesday, we went to the Sweets Factory with Emily Fuller and Benjamin. On Wednesday, we went to Gardner Village with Emily Cross and Jameson. And, on Friday, we went to Bountiful to see Mary and Jordan. It was a full week and we had a ton of fun. Thanks everyone! We will definitely be hanging out with all of you again real soon.
Make it Monday
Well, it is another wonderful week of "Make it Monday." However, I have to warn you that I didn't exactly complete a recipe. I need YOUR help.
I attempted to make Meringues. Have you ever made them? Well, I thought it would be pretty simple but apparently it didn't work out the way I liked. So, if you are up to the challenge, here is the recipe:
4 egg whites
1/8 tsp salt
1 1/4 cups sugar
1/2 tsp vanilla or almond extract (optional)
1 cup whipped cream (optional)
Preheat the oven to 225 degrees F. Grease and flour 2 large cookie sheets.
With an electric mixer, beat the egg whites and salt in a very clean metal bowl on low speed. When they start to form soft peaks, add half the sugar and continue beating until the mixture holds stiff peaks.
With a metal spoon, fold in the remaining sugar and vanilla or almond extrac, if using.
Pipe the meringue mixture or gently spoon it on the prepared sheet.
Bake for 2 hours. Turn off the oven. Loosen the meringues, invert, and set in another place on the sheets to prevent sticking. Leave in the oven as it cools. Serve sandwiched with whipped cream, if desired.
So....I basically did the first few steps but the mixture didn't look white. I'm not sure what I did. It probably has to do with the egg whites.
So, please oh please try this recipe and tell me what I did wrong. Thanks and have a fantastic day.

Workout Wednesday
This morning I worked out to Kathy Smith's Lift Weights to Lose Weight 2 DVD. It was okay. There is a warm up to get your circulation going, lower body 1 and lower body 2, standing upper body routine, upper body floor routine and an abs routine. I didn't do the standing upper body routine but I did the rest. I guess I didn't connect to Kathy Smith. Her instructions are clear but I was sort of bored. I give it a 2 for the difficulty scale. There was also a 20 minute stability ball workout which I didn't do either. Hopefully, next week will be funner.

Sweets Factory
This morning Emily and I were planning on going to the Hogle Zoo but it started to rain. So, I suggested the Sweets factory since it was free and indoor. It was much better and we got to try some samples. Yummy!
"Make it Monday"-Eli's 1st piece of chocolate cupcake
Since we failed to film Eli when he ate his 1st birthday cake, we tried again. This time I made chocolate cupcakes for "Make it Monday." I cheated and used a box. Next week, I'll try a new recipe.

We went to Newport Beach again and Eli still didn't like the water. But, mommy took him anyway.

Eli's 1st Birthday Party-Bear Theme
We celebrated Eli's 1st Birthday on Sunday July 3rd. It was perfect yet a little stressful.
I had planned his birthday party months in advance and was happy when it was finally over. I did a bear theme and the picnic area chosen was perfect.
My sister Cassie took Eli's photo when he was 11 months. I simply made a collage from Walgreens and stuck it in a frame.
Here are his gifts
My mom bought the cupcakes and I stuck #1 cupcake toppers in. Perfect colors-red, blue, white and a touch of yellow.
I bought gummy bears, cinnamon bears and made the chocolate bears for the kids treat bags.
Here is the entire display. I also knitted Eli a banner with his name on it. And, don't forget the balloons. Adrian helped blow them up. Thanks!

I bought him this birthday boy shirt at Kohls. Of course I got it for free since I had a $10 gift card.

We opened presents after Eli had cake and got cleaned up.
