We went to the Ronald Regan Library. I especially loved the Christmas trees for each decade.

Eli loved being on the horse.

My dad took Eli on a train ride in Simi Valley.

We also went on the merry go round on the Santa Monica Pier. We had a lot of fun shopping in 3rd Street.

We also went to the Noah's Ark Museum. It was pretty amazing! There were so many hands on activities. The best part was the elevator ride. We were trying to get to 1R. We got off on the wrong level, got back on. Then the elevator went down to the bottom, went back to the wrong level we were on before. Finally we made it to 1R to find out it was only a few steps above the wrong level we went on twice. Hilarious!

This was Eli's favorite part. He took all of the animals out and played with them for a long time.

Yes, we climbed up with Eli. It was pretty crazy.

Overall, our trip to California was a blast except for the fact that Eli threw up on the way and Adrian hit something (we still aren't sure what he hit). I am thankful we were able to spend some quality time with my parents and with Ryan's family.

Christmas Day

Christmas day was really fun! We took our time by first opening up our stockings. Then we went to church for an hour and came home to open our other gifts. Eli and Tayvlee had a anp so we put their gifts aside. I loved how we took our time and Christmas was spent with family.

Santa brought Eli some Mega Bloks which he loved.

Eli also loved playing with Tayvlee's toys.

We each bought each other the new Coldplay cd. It was pretty funny! We think alike.

Eli got a Hallmark book from his Nan. She has such a beautiful accent.

I gave Adrian a package of goodies and fun things he could do in California.

Adrian bought me a huge box of Ghiradelli chocolate. We got a lot of chocolate this year.

He also bought me a Snuggie. Last year, I bought him a snuggie and so he didn't want me to feel left out.

My brothers and sisters gave Mom and Dad BYU tickets and a popsicle maker. They were excited!

Eli's big gift from us was his own Thomas & Friends railway set. He loves trains!

2011 Christmas Eve

This past year, we went to California for Christmas to spend time with my parents and my brother's family.

Here are a few pictures of our Christmas Eve dinner. We also took turns playing Santa and opening up our Christmas PJ's. Ryan's family opened up their silly socks. What a fun tradition!

Thanks for a wonderful Christmas! It sure was fun to be in California. I feel so blessed.

Christmas Singalong

2011 was especially fun because I got to spend a lot of time with my sister Tiffany.

We went to the Larry H Miller Christmas singalong downtown on December 19th.

Alex Boye performed and it was fun to see him again. He had so much energy and excitement.

I'm not sure why I didn't take a photo of Eli and I. Oh, wait he was home with Adrian. And the funny thing...well not that funny....is that he threw up and Adrian had to clean it up. If you know Adrian, you would know that he doesn't like that sort of thing. He gets grossed out pretty easily so I was impressed that he cleaned up the mess. I did feel bad for both of them.

We also went to many of the South Towne Mall concerts. We even met Alex Boye which is one of our new favorite singers. He is the "other black man in the Mormon Tabernacle Choir." That is what he said. Hilarious! He is also from England. Wahoo! It was a fun Christmas!

Eli and Santa Claus

This year Eli and I went with Cassie, Tiffany and their kids to see Santa at Fashion Place.

It was the only place that allowed cameras. Well, this year, they told us no cameras. Luckily, their camera broke so they let us take photos with our cameras. Seriously, it as a miracle. Thank goodness! I didn't want to miss my opportunity of capturing this photo of Eli with Santa...

He didn't really like him. But, Santa held onto him for a couple photos. Afterwards, Eli waved bye bye. So, Eli likes Santa from a distance. Classic!

Then it was time for Claire, Catelyn and Malissa to see Santa. What a great shot! Thanks Cassie.

Our new Christmas tree

Adrian wanted a taller Christmas tree this year.

And let me tell you, it is much better than our 6 foot tree. It is 7"5 and has pre-lit lights.

Eli has broken a few ornaments but he knows not to touch them now.

We finally did it! We borrowed a ladder and put up Christmas lights.

Adrian started putting them up but he gave up so I stepped in while he held onto the ladder. It was pretty awkward but we did it.

We used a staple gun and lots of faith. It was hard to put the lights up along the top but we managed to do it. Eli even had fun playing with all of the leaves and running away.

This year, Eli was a DRAGON.

First, Eli and I went to the library to trick or treat. We scored a spider ring, sticker and sucker. Yes, that was it! I guess our libary taxes don't pay for a better trick or treating. Oh well! It still was fun.We love our library!

We met Emily and Jaymeson at the library for some fun. They dressed as Teenage Mutant Ninja Turtles.

This was the best photo I could take of Jaymeson and Eli.

Later, Eli and I met Tiffany, Becca and Catelyn at the mall. We went earlier to beat the crowds. We are sooo smart! It started getting crazy around 4pm (the time it was suppossed to start). Yes, we are that good! Eli scored a ton of candy which we got to use for our trick or treaters.

Eli was ready to go. We went trick or treating around our neighborhood. Eli got the hang of knocking on the doors and entering the homes. It was funny to watch. Also, alot of our neighbors handed out big candy bars since kids don't normally trick or treat. We had about four kids and two were duplicates (they said they forgot they came by). Ha Ha! We missed a few more because we were out with Eli.

It sure was fun! Till next year...

Yesterday, we went to the library for their "Train" themed day.

I was expecting a story, craft, etc but we were able to ride in a train.

Wahoo!

It was a little windy and I forgot my camera so Tiffany took our photo with my i-phone.

Not ideal but it did the job.

Thanksgiving Point Farm

Today, we went to the Thanksgiving Point Farm.

Of course, we were there right at 9:45 so we would beat the rush.

We went with Tiffany, Catelyn and Matthew.

First, we went on the pony ride.

I held him the entire time.

Then Tiff and Catelyn went on so we could coordinate photo taking.

Oh no! We were sent to jail.

But, they let us go and we went on a hay ride.

Then we looked at all of the animals, ate lunch and bought some icecream for 50 cents.

Well...he loves getting into my towel drawer. How will I ever be organized?

But...he is happy so I let him play.

Silver Lake again?

It is true! I went to Silver Lake again.

This time I went with some other mommy's and their first born.

It was a lot of fun except for the fact that Eli didn't want to stay in his stroller.

You see...I don't have a Bjorn or carrier but I do have friends/family who own one so next time

I'll have to borrow one. Hopefully, he will stay in it and it won't be a bad experience.

While I get ready in the morning, he loves to get into anything he sees even our tissue box.

Apparently, he isn't too keen on our swimming pool but loves his friend Jaymeson's pool. They stayed in for quite a long time while Emily and I chatted.

Silver Lake

While Anne was here, we went to Silver Lake. It is about a 30 minute walk and is located next to the Brighton ski resort. Anne and I also went to the temple in the morning while daddy watched Eli. It was a very relaxing day. Next time, mommy will remember to bring water and bug spray. I wasn't prepared.

Downtown SLC

My mother n' law came to town so we headed to Downtown SLC. We had perfect weather while she was there. We were also able to go to BYU, the Aquarium and have FHE with Anne's friend Shaunna and her husband. It was really nice to have Anne (Nan) in our home. Thanks for coming!

Spaghetti Night

SLC Bees Game

A couple of months ago, I won four tickets to the SLC Bees game. Of course, I asked if I could get one extra free ticket and the guy was sweet enough to do so. So, I asked Tiffany if she wanted to go.

We made it a "Girls night out."

We did watch the game for a few innings in the beginning and end of the game. And we had some fun on the Bee Express and park. I did miss Eli. He would have loved the train. Oh well! Next year I will need to score some more free tickets. Thanks Tiff for going with me. It was a blast!

Workout Wednesday

This morning I went out of my comfort zone and did the Bollywood Dance Blast DVD. I think this workout was a beginners workout to understand some of the moves they do. There were 2-20 minute fat blasting dance workouts. I did the first 20 minutes since Eli had a bit of a poopy situation. I know...excuse excuse. But, I did the first workout and it was really fun. It actually made me laugh!

It wasn't exactly like the Bollywood dances on the TV show, So you think you can dance. But, you still move to a story. There were shoulder and hip rolls as you wipe away your heavy burdens. My favorite was when we pretended to put on spiritual boots and carry a platter.You will jump, spin and shake. Now, I really want to try the second part of the DVD. I guess you will have to try it out to see what I'm talking about. So, if you get a chance, head over to your library and check it out. It sure will bring a smile to your face.

Last week

Last week, we had THREE play dates. Wahoo! On Tuesday, we went to the Sweets Factory with Emily Fuller and Benjamin. On Wednesday, we went to Gardner Village with Emily Cross and Jameson. And, on Friday, we went to Bountiful to see Mary and Jordan. It was a full week and we had a ton of fun. Thanks everyone! We will definitely be hanging out with all of you again real soon.

Make it Monday

Well, it is another wonderful week of "Make it Monday." However, I have to warn you that I didn't exactly complete a recipe. I need YOUR help.

I attempted to make Meringues. Have you ever made them? Well, I thought it would be pretty simple but apparently it didn't work out the way I liked. So, if you are up to the challenge, here is the recipe:

4 egg whites

1/8 tsp salt

1 1/4 cups sugar

1/2 tsp vanilla or almond extract (optional)

1 cup whipped cream (optional)

Preheat the oven to 225 degrees F. Grease and flour 2 large cookie sheets.

With an electric mixer, beat the egg whites and salt in a very clean metal bowl on low speed. When they start to form soft peaks, add half the sugar and continue beating until the mixture holds stiff peaks.

With a metal spoon, fold in the remaining sugar and vanilla or almond extrac, if using.

Pipe the meringue mixture or gently spoon it on the prepared sheet.

Bake for 2 hours. Turn off the oven. Loosen the meringues, invert, and set in another place on the sheets to prevent sticking. Leave in the oven as it cools. Serve sandwiched with whipped cream, if desired.

So....I basically did the first few steps but the mixture didn't look white. I'm not sure what I did. It probably has to do with the egg whites.

So, please oh please try this recipe and tell me what I did wrong. Thanks and have a fantastic day.

Workout Wednesday

This morning I worked out to Kathy Smith's Lift Weights to Lose Weight 2 DVD. It was okay. There is a warm up to get your circulation going, lower body 1 and lower body 2, standing upper body routine, upper body floor routine and an abs routine. I didn't do the standing upper body routine but I did the rest. I guess I didn't connect to Kathy Smith. Her instructions are clear but I was sort of bored. I give it a 2 for the difficulty scale. There was also a 20 minute stability ball workout which I didn't do either. Hopefully, next week will be funner.

Sweets Factory

This morning Emily and I were planning on going to the Hogle Zoo but it started to rain. So, I suggested the Sweets factory since it was free and indoor. It was much better and we got to try some samples. Yummy!

We also went to South Coast Plaza, Ruby's, Ashley and Ryan's pool, the park and I got my nails done with my mom.

Eli's 1st Birthday Party-Bear Theme

We celebrated Eli's 1st Birthday on Sunday July 3rd. It was perfect yet a little stressful.

I had planned his birthday party months in advance and was happy when it was finally over. I did a bear theme and the picnic area chosen was perfect.

My sister Cassie took Eli's photo when he was 11 months. I simply made a collage from Walgreens and stuck it in a frame.

Here are his gifts

My mom bought the cupcakes and I stuck #1 cupcake toppers in. Perfect colors-red, blue, white and a touch of yellow.

I bought gummy bears, cinnamon bears and made the chocolate bears for the kids treat bags.

Here is the entire display. I also knitted Eli a banner with his name on it. And, don't forget the balloons. Adrian helped blow them up. Thanks!

I bought him this birthday boy shirt at Kohls. Of course I got it for free since I had a $10 gift card.

We opened presents after Eli had cake and got cleaned up.

California Trip

California...here we come! We left on Friday night and arrived in California at 5am. Eli was okay in the car but the drive back was a ton times better.

We went to Newport Beach first. Eli didn't like the water. It was way too cold for him!

It was also probably too sunny for Eli.

But, he got to play with his cousin Tayvlee. Eli loved taking toys away from other children.

First day at the beach...not too bad. However, Adrian got some crazy sun burns on his forehead, arms and feet. Hilarious! Eli liked crawling in the sand and I chased him.

Workout Wednesday

Today, I worked out to Crunch Belly, butt & thighs boot camp.

Sorry, I'm having problems posting a picture so you will need to check it out yourself.

This workout was 41 minutes long and didn't seem too hard. There were four different levels so if you can't do the third or fourth then you could stick to the first or second level. But, believe me, you can do it. It isn't too difficult. Sure, you will sweat but that is the joy of exercising.

Teri Ann Krefting was the instructor. She helped "target trouble spots with a two-tiered attack: fat burning cardio to slim you down and solid muscle conditioning to firm you up." It was fun but if you have small children, watch where you step. Eli was crawling all over the place so I had to watch where I was going. It was pretty fun. I did squats, kicks, push ups, sit ups and more. I felt pretty good once I finished so I recommend this workout. I give it a 3 out of 5.

No equipment necessary-just water and shoes.

Swim time

Christiana Smith invited Eli and I over for a swim. Well, it only benefited Eli. I got to watch. It was fun to see Eli play in the mini pool. Apparently they are only $5 at Wal-mart. Wahoo! Anyway, it was fun. We are really looking forward to going to California this weekend. It will be exciting to see Eli in a bigger pool and hopefully Tayvlee won't make him cry. Hee hee.

Make it Monday

I'm only a day late in posting "Make it Monday." Life is a little crazy since we are going on vacation. Wahoo!

So, I made some chocolate bears for Eli's "bear" birthday party. I also made some coffee cake from a box for Adrian and I to eat. Yum! The bears were pretty easy. Our microwave doesn't work so I melted the chocolate in a pan. Then I used a tablespoon to fill the bear tray. Next, I stuck the tray in the fridge and waited about 30 minutes. The bears came out perfectly. It was super easy to take the molds out of the tray. I also used my sister's tray. Since it only had six, I decided to get another bear mold from Hobby Lobby. It was only $1.99 if you are interested in making chocolate animals. Plus, if you are on their email list you can get an additional 40% off. Happy late Monday!

Play time with Beck

I was able to babysit one of our newest neighbors son, Beck. He was pretty easy. Eli was the one that was a little difficult. Eli is on a regular schedule so if it is time to eat, IT IS TIME TO EAT. No questions asked. He can be pretty cranky. But, he is still cute. It was fun having a friend over for Eli. They followed each other around, played, listened to me singing nursery rhymes and getting into everything. Beck has learned how to walk but he will crawl most of the time. I had to remove anything that he could get his little hands on. Plus, Eli has learned how to use furniture to stand up. It is pretty cool! I love how he is growing. Well, we will have to have another play date.

He is growing so much! He loves to stand and wait for me to get him from his nap/sleep.

Workout Wednesday

This morning I worked out to Abs of Steel Sculpting and Toning. This was the perfect DVD if you have small children because there are six complete routines.

They are the following:

-Ab Conditioning-10 minutes

-Ab Isolating-10 minutes

-Ab Toning-5 minutes

-Ab Flowing-5 minutes

-Ab Pilates-5 minutes

-Ab Yoga-10 minutes

So, if your little one needs your attention, you could take a break between the routines. For instance, I had to change Eli's diaper, give him some snacks, grab some water, etc etc.

I really enjoyed these workouts and it wasn't too difficult. I give it a 3. There are variations to allow you to work at a moderate, intense or ultimate pace depending on your fitness level or how you feel from workout to workout. "Leisa Hart has starred in 14 buns of steel videos and has over 26 years of fitness experience as an instructor." So, she really knows what she is doing and it is fun. So, check it out and workout for 10, 20, 30 or even 40 minutes depending on your schedule.

Today for "Make it Monday," I decided to tell you what I made for the 4th of July. I actually made a few of these cute clips a year ago. However, since I pretty much ate ALL of the cookies from last week...I need a break from snacking.

So, first I went to one of my favorite blogs called, "Make it and Love it" found {HERE}. I bought some red felt, clips and found some felt stars already cut out. This morning I attempted Dance and be fit-abs burn dvd. It was interesting especially since Eli just wanted to climb on me when I was on the floor. That was pretty funny! He is getting very mobile. Anyway, the dvd consisted of 2 ab-slimming dance workouts. Each workout is 20 minutes long and there is also a five minute warm-up and cool down session.

Okay...my thoughts. There was a narrator/instructor that doesn't actually workout. Her only job was to instruct Kimberly Mullen who was a beautiful dancer. I definitely had my blinds down. I love watching So you think you can dance but I could never do what they do. I love how I was able to work out my abs through dancing (well, I don't know if you call what I was doing dancing). I tried! You move your hips a lot and it was a wonderful way to sculpt and strengthen your entire body. I'm not sure if I'll check it out again but it was fun. I give it a 2. Today for Make it Monday, I decided to make coconut macroons found {HERE} and Andes Creme de Menthe Chunk Cookies. Yummy! The macroons are for the ward's BBQ tomorrow and since I had the cooking supplies, I thought it would be perfect. It was actually a spur of the moment decision at the store. I saw the Andes chips and thought...Yum. What excuse do I have to buy them? Well, I could always see if there is a recipe on the back? So I got the recipe from the back of the package. I'm sure if you just look for the chips, you won't have to come back to my blog to make them. Here is the recipe just in case you desire to make them...

1/2 cup salted butter-softened

3/4 cup dark brown sugar

1/2 cup white granulated sugar

1 tsp baking soda

1 tsp baking powder

2 tsp vanilla extract

2 eggs

1 package of Andes Creme de Menthe Baking Chips

2 2/3 cups sifted all-purpose flour

Blend butter, sugars, baking soda, baking powder, vanilla and eggs until mixed. Stir in Andes Baking chips and then flour. Chill approximately one hour in refrigerator. Measure out approximately 1 oz of dough. Form ball and slightly flatten. Raise oven rack one level above middle and bake on non-stick baking pans. Bake at 350 degrees for approximately 8-10 minutes. Cool on pans for two minutes before removing.

Makes about 4 dozen cookies.

So, we bought Eli a container that allows little hands to reach in and grab a snack. Well, he didn't figure it out until...he dumped them all out on the floor. So, I guess I taught him how to eat off of the floor. He even wanted to share with me. Yuck! But, isn't he adorable in his cute overalls? I got them at Target in the 70% clearance rack. Yippee!

First train ride

Yes, it's true! I took Eli on his first train ride and we TOTALLY matched. Arn't we cute or what? I've been meaning to take him on the train ride at the sandy mall but I can't justify the $3. And, that is only for me. Of course Eli is free till he turns 1 so that may give me a reason to take him.

Anyway, we went with the Lytles to This is the place today and it was fantastic. First, it was a free day so we went early so we could get there before the mad dash of Utahns. Then, we made it up the steep hill to ride the train. We didn't ride it once...we rode it twice. It was fabulous! Then, we ate our free icecream cones. And, no I didn't give Eli any. I'm waiting till his 1st birthday which is less than a month away. Oh my! I can't believe how old he is.

Overall, it was really fun! I will definitely be going next year and maybe a little earlier so I could take Eli on the pony ride. Wahoo!

This morning I worked out to Cheryl Burke's Disco Abs DVD. It sure was a lot of fun to move my hips. The DVD consisted of 5 workouts on 3 DVDs. Here is the breakdown:

1-Workout Disco Abs-Songs-Disco inferno, It's Raining Men, YMCA

2-Workout Abs-That's the way I like it!-Song-That's the way (I like it)

3-Workout I will Survive Cardio-Songs-I will survie, Ain't no stoppin us now, Shining Star

4-Workout The beginner Hustle-Songs-Dim all the lights, the hustle

5-Workout Boogie Buns & Thighs-Songs-Boogie Oogie Oogie, Boogie Wonderland

So, I decided to do #3 and #4 to make the exercise 42 minutes. Perfect timing!

So, I felt a little funny but I kept on dancing. I gave this DVD a 3 since I wasn' out of breath but it was sort of hard to get the moves right. I guess I'm not a dancer. Does anyone remember the hustle? I sure do! When I was a teenager I used to go to church dances. Once the hustle came on, I was out in front doing the dance. I also knew ALL of the words. They consisted of "Do it" and "Do the hustle" so it wasn't too hard to memorize. The only thing I didn't like was that the Hustle and I will survive songs were towards the end of the exercise. So, if you are looking for a fun and exciting DVD this would be the perfect one for you.

For FHE, Adrian and I did Bob Harper's Inside out method DVD. Yes, that is twice this week that I've worked out. I also walk to the library with Eli a couple of times a week. I guess since we are going on vacation pretty soon we are pretty motivated to get in shape. Plus, it is swim suit season. Yikes! I give Bob Harper's DVD a strong 5. It was pretty tough. It was harder than his other cardio DVD I did a couple of weeks ago. But, we finished the entire hour. We may have had a few extra breaks throughout the DVD but we did about 75% of it. There is also a 25 minute beginner workout to get you started. The two girls on the DVD are monsters so don't follow them. Go at your normal pace and finish. Good luck!

Today, I decided to make Coconut Macarrons. I've made them before but haven't had them for awhile. Normally, I recommend doubling the recipe so you don't waste the sweetened condensed milk but I ran out of coconut so I stuck with the regular recipe. Here it is...Enjoy!

Makes 24

1/3 cup flour

1/8 tsp salt

2 1/2 cups shredded coconut

2/3 cup sweetened condensed milk (14oz can if doubling)

1 tsp vanilla extract

1-Preheat the oven to 350 degrees. Grease 2 cookie sheets.

2-Sift the flour and salt into a bowl. Stir in the coconut.

3-Pour in the milk. Add the vanilla and stir from the center to make a very thick batter.

4-Drop heaped tablespoonfuls of batter 1 inch apart on prepared sheets. Bake until golden brown, about 20 minutes. (I do 10-13 minutes). Cool on a rack.

We sat outside for about ten minutes while we waited for daddy to get home.

This was sadly the best picture I could take. Eli didn't want to sit still. He has been "army" crawling everywhere and is starting to crawl on his hands and knees (not much but is getting there). Isn't he cute or what? His top two teeth are coming in and he says "mom" when he needs me. It is pretty cute! One more month and he will be one year. Wow! That sure went by fast. I still love him!

Eli was invited to his first birthday party! It was a joint birthday party for Becca and Catelyn McDaniel at Chuck E Cheese. The theme was "farm animal." Tiffany put together the coolest goody bags. Thanks again! I think I was more excited than Eli but I'm sure that will change later on. Or will it... Anyway, we had a blast! The only downside was that most of the rides didn't have a seat belt. Are you kidding me? So, I think I liked the clock ride the best because he was strapped in and I could actually take photos of Eli. Yes, it is ALL about the photos. Well, it sure was fun.

Next, it will be Eli's first birthday and guess where it will be???

This morning I worked out to The Firm total body time-crunch. It is led by instructor Rebekah Sturkie. She combines high-energy cardio moves with targeted body shaping exercises. It is a 45 minute workout but there is a 25 minute express workout if you are pressed for time.

Okay, so last week I worked out to Bob Harper's workout and maybe I wasn't completely honest. It was HARD! Apparently someone who secretly follows my blog told me that she wanted to kill me. So, I thought I should rate them on a scale from 1-5, 5 being the hardest. So, this dvd was about a 2/3. However, I felt lost sometimes since Rebekah goes pretty fast. But, if you are an avid cardio woman then you should have no problem. This workout doesn't even compare to the Bob Harper dvd which I will give a strong 5 on. So, if you do get this one, please let me know how it was and what you would rate it as. Till next time...

Okay so I didn't forget to do something for "Make it Monday." Life gets crazy plus I had a headache and wasn't feeling too great. I decided to try out some cupcakes from my brand new book-Hello, Cupcake. The cupcakes were pretty tasty. I also tried out two different frostings-cream cheese and chocolate. The cream cheese frosting didn't really go with the chocolate cupcakes so that is why I'm late in writing this blog. But, I'm sure you all understand. Anyway, here is the recipes.

Perfect Cake-mix cupcakes

1 box (18.25 oz) cake mix (French vanilla, devil's food, or yellow)

1 cup buttermilk

vegetable oil (the amount on the box)

4 large eggs (in place of the number called for on the box)

1-Preheat oven to 350 degrees. Line 24 muffin cups with paper liners.

2-Follow the box instructions, putting all the ingredients in a large bowl and using the buttermilk in place of the water specified (the box will call for more water than the amount of buttermilk that you are using), using the amount of vegetable oil that is called for (typically, white or yellow cakes call for 1/3 cup; the chocolate cakes usually call for 1/2 cup), and adding the eggs. Beat with an electric mixer until moistened, about 30 seconds. Increase the speed to high and beat until thick, 2 minutes longer.

3-Spoon half of the batter into a ziplock bag. Snip a 1/4 inch corner from the bag and fill the paper liners two-thirds full. Repeat with the remaining batter. Bake until golden and a toothpick inserted in the center comes out clean, 15-20 minutes. Remove the cupcakes from the baking pans, place on a wire rack, and allow to cool completely.

Chocolate frosting

1 stick unsalted butter, cut into 8 pieces

2 oz semisweet chocolate, chopped

1/2 cup unsweetened cocoa powder

1 box (16 oz) confectioners' sugar

1/3-1/2 cup milk

1-Combine the butter and the chocolate in a small saucepan. Melt over medium heat, stirring constantly. Add the cocoa powder and stir until smooth. Transfer the chocolate mixture to a large mixing bowl and beat with an electric mixer.

2-Add the confectioners' sugar alternately with the milk, adding more milk, if necessary, to thin, and beat until fluffy and smooth.

This morning I worked out to Jillian Michaels' Ripped in 30 DVD. It is 4 weeks of 4 incredible workouts to get you in insane shape. It also includes a 30 day diet plan. I haven't checked it out but I will. I did Week 1 and it was really fun. I hope I can renew it at the libarary so I can do week 2.

Jillian focused on arms, abs, and legs or in her words-3 minutes of strength, 2 minutes of cardio and 1 minute of abs. She gave a tip to exercise 5-6 times a week. Yikes! Well, I failed. I only work out once a week but at least I am working out. I also call climbing the stairs a billion times a day and carrying Eli a workout. I guess whatever works in your schedule is best. Has anyone found some awesome workout DVD's? I should do all of the Jane Fonda's 80's workout DVDS. Till next time...

Chocolate Chip Muffins

Today for "Make it Monday," I made Chocolate Chip Muffins. Yum, right? Well, they were okay. I think they needed more sugar or something-butter maybe?? Anyway, here is the recipe if you'd like to try it out. My tip is to use ALL of the chocolate chips. The picture shown didn't justify that step.

Makes 10

1/2 cup butter at room temp

1/3 cup granulated sugar

2 TBS dark brown sugar

2 eggs at room temp

1 1/2 cups cake flour (I used regular since I couldn't find cake flour)

1 tsp baking powder

1/2 cup milk

1 cup semisweet chocolate chips

1-Preheat oven to 375 degrees. Grease 10 muffin cups or use paper liners.

2-With an electric mixer, cream the butter until soft. Add both sugars and beat until light and fluffy. Beat in the eggs, 1 at a time.

3-Sift together the flour and baking powder, twice. Fold into the butter mixture, alternating with the milk.

4-Divide half the mixture between the muffin cups. Sprinkle several chocolate chips on top, then cover with a spoonful of the batter. To ensure even baking, half-fill any empty cups with water. (I think I needed ALL of the chocolate chips in this step) I think this step wasn't explained correctly.

5-Bake until lightly colored, about 25 minutes. Let stand 5 minutes before unmolding.

So, I guess it is another day when I learn that not all muffins are delicious. They were okay but maybe if YOU make them, they will turn out fabulous. Till next time...

Yes, it's true! It was my birthday yesterday and it was fabulous. First, I woke up to breakfast in bed or in other words a shake that Adrian brought me and I happened to be in bed. It was cute and I appreciated the thought. Then Eli and I went to American Fork to eat at Rubios with Cassie, Claire, Emily, Jessica and Jaden. I actually had the fish taco this time and it was delicious. Then we headed over to Cassie's home so I could get my makeup done by her friend Dawn. Let me tell you a little about Dawn Weidauer. To me, she is a super star because she did Stephanie Meyer's makeup as well as Phi's makeupl from Modern Family. Check out her blog HERE. If you haven't seen Modern Family, I suggest that you do. It is hilarious and I am a huge Phil fan. He also lives in Salt Lake City so maybe I'll bump into him someday. Ha ha!

I hung out with Cassie for several hours which was perfect because it is always fun to be around others on your birthday. Cassie gave me a 2 year subscription to Family Fun magazine, carrot cake (my favorite) and a $10 Golden Spoon coupon. Wahoo! That was an awesome gift! Then, I cruised home to meet Adrian. We drove to Fashion Place and went to Banana Republic (our favorite shop especially when Karen-our fabulous "what not to wear" stylist) where they were having a 25% off evening. We also had a couple of gift cards to use. I found the perfect black pants. They are AWESOME and very comfortable! Perfect for summer because they are light weight and feel as if I'm wearing exercise pants. I love them! I also purchased a few shirts. We bought dinner at Panda Express, fed Eli and put him to bed. I have been pretty strict on his bedtime-7pm.

Finally, I was able to open all of my wonderful cards and gifts. I ended up getting money (thanks mom/dad and Melanie/Stefan-WOW) and a Camcorder from Adrian. I wasn't expecting anything and he said there is more coming in the mail. I guess I didn't expect anything because I have everything that I need-a family who loves me, a cute son and friends who I can lean on. I also received several fun birthday phone calls throughout the day (my parents who celebrated my birthday with me as they were in NYC), facebook messages, a mini bundt cake and chocolate. Wow! I really was spoiled yesterday. Thank you everyone for thinking of me on my special day. It meant a lot that you all cared! Thanks again!

Pedicure fun with friends

Today, I went with Emily and Melissa to get pedicures. It was so much fun! As a thank you Melissa treated Emily and I for throwing her a baby shower. It was such a nice treat! It might as well be my birthday treat. It was perfect. We all go flowers as well. My feet feel so pretty. Thanks again Melissa. It was a blast.

Wow! Awesome workout! Let me just say that Bob Harper's ultimate cardio body DVD was hard but worth the effort. He has two workouts-Workout 1-Extreme cardio challenge (1 hour) and Workout 2-10-minute glute challenge. I did workout 1. He targeted arms, chest, back and legs (lots and lots of lunges). I can't imagine working out with him every day on the biggest loser. He is an extremely hard coach which makes him a very talented guy. He is motivational and doesn't allow you to quit. There were three girls and a guy along with him. All three girls never took a break but the guy struggled. I will be working out with Bob again. He was outstanding!

Day 2 of my birthday week

Well, it has been one exciting birthday week. Yesterday afternoon, Eli and I went to World Market to spend the $10 gift card. We got a cupcake pan and a Yorkie chocolate bar for Adrian. The total cost was .50 cents. Wahoo! I think that was less than last year. Also, the employee named Jeff wished me a happy birthday. That was fantastic!

Today, we went to Noodles and Company and I ordered a small Cesar salad and the Bangkok curry bowl. The total cost=$0. I was planning on going to Ruby Tuesday to get a free burger but the one in Draper closed down so it was onto plan B. There is always a plan B. Luckily, it wasn't raining too hard.

Wait till Wednesday...I'm looking forward to the afternoon.

Let the party begin!!!

So, it's my birthday week and I started having fun with Elijah. Today, we went to Schlotzsky's to get a free small sandwich. Then we headed over to Del Taco to score a free premium chocolate shake. Yummy! I also received a 20% off coupon for one of my knitting stores (Unraveled). Knitting stores normally don't have coupons so this was a real treat. Of course, I bought some red yarn but it is super soft (not like the yarn I get from Roberts craft). How did I score free stuff? If you sign up with different restaurants, fast food, etc, they will send you the birthday coupon. Check out Hip2save for birthday freebies. It is really fun and exciting!

Later, we are heading over to World Market because I have a $10 coupon. So, in order to beat the system, I will find something that is close to $10. Last year, I only paid .70 cents for a couple items. Wahoo! The only thing I didn't like was that they didn't even wish me a happy birthday. Boo customer service! Oh well! I got my free stuff and I'm happy.

Today for "Make it Monday," I wanted to share with you the baby shower that I hosted last Saturday. It was so much fun! Melissa is due on June 3rd and this was her first baby shower. Yikes! I think I was freaking out by this time last year. I guess I like to be prepared. I knitted a "BABY" banner which I hung next to the tissue paper pom poms. So fun and easy to make! Obviously, the colors were bright pink, black and white.

I made this diaper cake a couple of months ago. I thought it would make the perfect baby gift.

Emily Fuller brought the food and cookie goodie bags. She was so helpful! I decorated with Good n' plenty and pink kisses. Yummy!

Cute Eli joined the fun! There were actually a few babies that came so it was fun to see them interact with one another.

I forgot to take a photo with the sandwiches so this picture isn't complete. But, I think you get the idea.

The cupcakes were a hit! I actually won a DIY cupcake kit and the "It's a Girl" topper and cupcake holders from another giveaway. It was perfect timing.

Yes, I dressed in pink (one of the colors for the baby shower). And, Emily wore black. And yes, I take after my mother.

10 Months old

Yesterday, my sister Cassie took a few photos of Elijah with his favorite bunny blankie. Whenever he sees it, he will put his two fingers in his mouth. It is so cute! I don't think he can sleep without it. He continues to roll around the room and is starting to show signs of crawling. Also, he is getting two more teeth. He has enjoyed eating anything from peanut butter/jelly sandwich to sweet potatoes (I cook them in a crock pot) and bananas. He still hates green beans and isn't too keen on carrots. Yuck! He is adorable and my little bud. I love him so much!

Last night, I had the McDaniels over for dinner and FHE. It was a blast! Adrian is out of town so I thought it would be fun to share the evening with some family. First, we had Hearty chicken noodle soup, Red Lobster biscuits (yes, I made them and they were fabulous), and a spinach raspberry dressing salad. Yum! Let me just say, I was so glad I had some cheddar cheese to make the biscuits. I had made some other rolls but I don't think I let them sit out long enough. Something wasn't right so I quickly made the other biscuits. Then we had FHE. Zach did a wonderful lesson on the armor of God, I shared a story and conducted, Tiffany and Catelyn prayed and Becca led the song. Then we had vanilla pudding and cookies and played Whonu. Overall, it was perfect. Thanks Tiff for sharing the evening with Eli and I. I think Eli and Catelyn had a lot of fun too. They were too cute and I had to take a few photos.

This week for "Make it Monday," I decided to show off my knitting talent. Elijah's first birthday is coming up in July so I'm getting prepared. I made a cute banner with his name on it. Of course, his party will be red, blue and white (not because his birthday is a day after July 4th). The theme of his party will be teddy bears. I bought some bear plates, cups, etc and the colors were red, white and blue so that is the main reason for my color decision. Anyway, I had to make a total of 12 triangles since I had to make two per letter. Then I learned how to do a basic single crochet stitch for the letters and poof...done. It did take me awhile. But, it is finally done.

Since I'm throwing my friend Melissa a baby shower this weekend, I'm in the process of making another banner. I'm only doing eight this time to spell out BABY. I'll show you pictures of the shower next week. Let me know what you think. I love to read your comments! Till next time...

While my parents were in town, we went to some fun places such as In n' out, the church museum, BYU, a soccer game and the Living Aquarium (which I bought a season pass). Eli loved the Aquarium so we will be going back often. Wahoo! We also went to Zupas and Sub Zero (icecream place). Yum! Now, I'm off to Tales for Tots with my parents. Oh, the places we will go...

Today, I worked out to The Firm pump pump n' jab. This was more of my style. I love cardio kickboxing and this DVD was exactly what I needed. I wasn't able to finish because Eli wanted my attention so I'm going to renew it and try it again. This DVD is 45 minutes long.

Overall, I really enjoyed doing The Firm. I just needed more time and a quiet baby. So, I definitely recommend this one in case you are following along. Does anyone have a favorite workout DVD?

This morning I worked out to Tight on time by Tamilee Webb. It was perfect because I really was "tight on time." My mom is coming, Eli and I are going to the library and of course Eli needs his naps. So...this dvd was appropriate. There are four ten minute workouts that you could choose from. They are arms and shoulders, total body rocks, super abs and total body tubing. I chose to do super abs and total body rocks.

Tamilee is a great instructor. She doesn't quite look like the picture above. They probably did a little bit of editing. Anyway, she made every second count towards toning my body. A clock is also displayed to let you know how much time is left. I don't know if that is a pro or con but I thought it was a great idea. The entire dvd is 48 minutes so if you can find time throughout your day, I suggest you rent or buy the video. It was fun and she is motivational.

This year was a little different for me...at least I got to spend some time with my little guy. Isn't he adorable in his new tie? I think so... One good thing was that I didn't have to cook. Eli ate sweet potatoes and I had some leftovers. Yum! Where oh where was Adrian? Well, I took him to the airport. So...Easter was spent with Elijah and he was a delight. He always makes me laugh.

I also got to watch a Hallmark film-Beyond the blackboard which was excellent. Did anyone else watch it? I always love a good hallmark film especially when they show a 1970's or 1980's commercial. Awesome! Anyway, I hope everyone had a fabulous Easter.

Workout Wednesday

Today I worked out to Denise Austin's 3 week boot camp. It was definitely my style! I'll just need to remember to start working out when Adrian is gone. There were a few laughs from him. But, not to worry...it was a fun workout. There are two supercharged workouts and one ab workout. The two 20 minute workouts are cardio & strength intervals and athletic training. I didn't do the ab fat-blaster because I ran out of time. So, I'll try and do the workout again on Saturday.

Both workouts were easy to follow. I really like Denise Austin's style of teaching. She is clear, fun and motivating. They weren't incredibly difficult but I did have my water on hand just in case. It was definitely worth my time. So, go and check this one out at your local library. You won't be disappointed.

Meeting the Easter Bunny for the 1st time

Today, we went to visit the Easter bunny with Cassie and Claire. However, we didn't think that the bunny was too exciting. He was a bit boring. Boo Easter Bunny! At least Elijah smiled. I was afraid he would start crying. Then we made our way over to the Sweets factory. We wore blue hair nets and tried different candy. Yum! It was one fantastic day! Thanks Cassie. We had a lot of fun. Doesn't Eli look adorable in his new tie?

Today for "Make it Monday," I am making Nut Lace Cookies. It sounds fancy, doesn't it? I believe these are the same cookies that my Grandma Roberts used to buy. But, I'm not sure. I haven't had those in many years so I may be wrong. They sure are yummy.

Here is the recipe...I hope I don't mess it up. I've added my notes in red. Good luck!

1/2 cup blanched almonds
4 TBS butter
3 TBS flour
1/2 cup sugar
2 TBS heavy cream
1/2 tsp vanilla extract

1-Preheat oven to 375 degrees. Grease 1-2 cookie sheets. Make sure you have a good pan. I used one of my older pans and the cookies got stuck. The second batch was much better because I used an IKEA pan or maybe I got used to making them.

2-With a sharp knife, chop the almonds as finely as possible. Alternatively, use a food processor or blender to chop the nuts. I used a blender and it worked out great.

3-Melt the butter in a saucepan over low heat. Remove from the heat and stir in the remaining ingredients and the almonds.

4-Drop tsps (literally 1 tsp-no more, no less) 2 1/2 inches apart on the prepared sheets. Bake until golden, about 5 minutes. I baked them for 4 minutes the second time and they were golden around the edges. Perfect! Cool on the sheets briefly (about a minute, don't wait too long or it will be hard to lift off), just until the cookies are stiff enough to lift off.

5-With a metal spatula, transfer to a rack to cool completely.

This is the pan that didn't work. I had to throw them away and start another batch. But, it got easier. I'm bound to make a mistake when I bake or cook so I try to be prepared to start over.

Also, make sure to grease the pan well. I greased the pan and then used a paper towel to make sure the entire pan was greased.

I know they don't look perfect but I tried. They are breakable so be careful. Also, some got stuck to each other so be sure to space them evenly.

On Friday Adrian became a US citizen for his mother. So, I made him a candy gram since I knew it would be hard on Adrian to become an American. He is still British in my opinion.

First, we got there an hour early. Next, Elijah and I were taken downstairs to wait with all of the other family members. We were able to watch the ceremony on a screen but Eli was super loud (even Adrian could hear him and he was on the main floor). While our family members were saying the oath, they let us go upstairs to take photos. Luckily, I made a friend (her husband was from Sweden) whom I could trust to watch my stroller/car seat. Eli and I found daddy and took a few photos (they aren't perfect but oh well.). It was a little sad for me because I know how hard it was for Adrian to take the oath. However, many people were so happy to become a US citizen so it was neat to hear their stories. There were 55 people from Mexico, an 84 year old, many people from Africa and the Islands, etc etc. Overall, it was a nice ceremony but Elijah and I were glad it was over.

Workout Wednesday

This morning I worked out to a 10 minute solution-Dance off belly fat DVD! Yes, it was interesting. There were five 10 minute workouts. I did four out of five. The workouts were Belly blaster, latin flavor waist sizzler, attitude and energy, fat burning beat and dancer's silhouette.

As for my opinion...Petra Kolber was a little too fast. I know the workouts are only ten minutes but I felt "off" and really slow. I am definitely not a Latin dancer. That is for sure. When I went to BYU I took a couple of Hip Hop classes at 24 hour fitness with my roommates. And, I was definitely not a Hip Hop dancer either. I envy those that CAN dance.

Well, at least I tried a new DVD. I don't think I'll do it again anytime soon. Till next time...

CHOCOLATE CRUMB BARS

For "Make it Monday" I made Chocolate crumb bars. However, I actually made them yesterday because we went to my brother's home for dinner. So, Adrian told me that I HAVE TO make something else today. So I decided to do walnut cookies again since he really likes them. Now, I just have to go to the store for some butter. At least I'm running other errands today... So, here is the recipe for the crumb bars. They sure were a hit last night...

1 cup butter

1 3/4 cup flour

1/2 cup granulated sugar

1/4 tsp salt

2 cups Nestle Toll House semi-sweet chocolate morsels, divided

1 can (14 oz) Nestle carnation sweetened condensed milk

1 tsp vanilla extract

1 cup chopped walnuts (optional)

Preheat oven to 350 degrees. Grease 13x9 inch baking pan.

Beat butter in large mixing bowl until creamy. Beat in flour, sugar and salt until crumbly. With floured fingers, press 2 cups crumb mixture onto bottom of prepared baking pan; reserve remaining mixture. Bake for 10-12 minutes or until edges are golden brown.

Combine 1 cup morsels and sweetened condensed milk in small, heavy-duty saucepan. Warm over low heat, stirring until smooth. Stir in vanilla extract. Spread over hot crust.

Stir nuts and remaining morsels into reserved crumb mixture; sprinkle over chocolate filling. Bake 25-30 minutes or until center is set. Cool in pan on wire rack.

Makes 2 1/2 dozen bars

This morning I worked out to Denise Austin's body makeover mix. So, there are 3 boxy-toning workouts-firm upper body, lean lower body and tight abs. Each workout is 15 minutes. I can definitely feel it as I'm sitting here. So, if you want to slim and sculpt your way to a better body, try this DVD. It is fun and exciting. Also, it has a few ballet moves so it was interesting to see what my body CAN'T do. Oh well, at least I'm working out once a week. It was more than I did before. Oh wait, I used to run and I ran a 1/2 marathon. I guess I 'm a little lazy. Good luck. Till next time...

Oh, how I love getting the mail (but not the bills)

Guess what came in the mail yesterday? I new tie for Elijah. Of course I did win it from The little Gentleman's closet so go check it out. It is awesome. I decided to give the tie to Eli on Easter. I can't wait till he wears it.

Look what else I got in the mail. This came from Target. Lots of free samples and more coupons. Yippee!

Don't you just love getting the mail? It is the highlight of my day (besides seeing my cute little guy). But seriously, it makes me happy when I know there are sweet treats in the mail. I love getting boxes, cards or whatever in the mail (except bills). I love the unknown,the excitement and anticipation. I love it all! I'm waiting for some kitchen labels I won to arrive in my mailbox. Oh how I love my mailbox and my mailman who sweetly delivers those surprises. I guess I'll wait till 4 till the mailman comes...

Elijah is now nine months old. Can you believe it? I'm sure I say that each month but I can't help it. My little guy is growing up and definitely needs a haircut. I'm too nervous to do it and I don't want to spend the money to do it so right now it looks funny. I'm not spiking his hair either. My dad made fun of it. At least he has those adorable two front teeth. What can Elijah do now that he is 9 months old???

-Can eat one of those yummy banana stars by himself. It is the cutest thing ever!

-Rolls over and over and over (not even close to crawling)

-NEEDS his mommy all the time

-He got sick for the first time (It was so sad too but he is better now)

So, what can your child/children do? I keep hearing that Tayvlee can stand up. Well, Elijah can speak four different languages so there you go.

COCONUT OATMEAL COOKIES

Today I am making coconut oatmeal cookies. I choose a recipe with ingredients that I already have. It works out great! Here is the recipe:

2 cups quick-cooking oats

1 cup shredded coconut

1 cup butter at room temp

1/2 granulated sugar

1/4 cup dark brown sugar, firmly packed

2 eggs

4 TBS milk

1 1/2 tsp vanilla extract

1 cup flour

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1-Preheat oven to 400 degrees. Lightly grease 2 cookie sheets (which I now own...finally).

2-Spread the oats and coconut on an ungreased baking sheet. Bake until golden brown, 8-10 minutes, stirring occasionally. Note: I did 8 minutes and it was burnt so I had to redo it. Luckily I had enough oats and coconut to try it again. I suggest 5-6 minutes.

3-With an electric mixer, cream the butter and both sugars until light and fluffy. Beat in the eggs, 1 at a time, then the milk and vanilla. Sift over the dry ingredients and fold in. Stir in the oats and coconut.

4-Drop spoonfuls of the dough 1-2 inches apart on the prepared sheets and flatten with the bottom of a greased glass dipped in sugar. Bake until golden, 8-10 minutes. Transfer to a rack to cool.

Well, I fogot to do the "flatten with the bottom of a greased glass dipped in sugar." Woops! I guess I'm not perfect. Also, my dough was a little runny. The cookies were okay. I wish I were a perfectionist but I'm not so the best I can do is the best I can do. Good luck!

Since my baby is teething I wasn't able to post this yesterday. So, yesterday I made HERMITS. Yes, I know the name is funny but I asked Adrian what he wanted me to make and he chose Hermits. It makes about 30. Here is the recipe. 3/4 cup flour 1 1/2 tsps baking powder 1 tsp ground cinnamon 1/2 tsp grated nutmeg 1/4 tsp ground cloves 1/4 tsp ground allspice 1 1/2 cup raisins 1/2 cup butter at room temp 1/2 cup sugar 2 eggs 1/2 cup molasses 1/2 cup walnuts, chopped 1-Preheat oven to 350 degrees. Line the bottom and sides of a 13x8 inch pan with wax paper and grease. 2-Sift together the flour, baking powder and spices. 3-Place the raisins in another bowl and toss with a few TBS of the flour mixture. 4-With an electric mixer, cream the butter and sugar together until light and fluffy. Beat in the eggs, 1 at a time, then the molasses. Stir in the flour mixture, raisins, and walnuts. 5-Spread evenly in the pan. Bake until just set, 15-18 minutes. Let cool in the pan before cutting into bars. Done. They weren't too bad. It really does help to place wax paper down before the mixture. So much easier. Till next time...

Here is the wonderful hat I received in the mail the other day (I won it). I don't think Eli liked it. It is a little big but I asked for a size from 15-18 months. I still think he is adorable in it. He probably likes the packaging more than the hat. Silly boy.

New addition to Eli's room

I added the lamp which has been in our basement for many years. It definitely needed some dusting. I'll have to put some cute decor on the lamp shelfs.

My sister Cassie gave me the shadow box and I've had the sign since my baby shower. Also, I added the command hooks which work really well.

Overall, I love his room. Before Eli came along I hated this extra room but now I am a huge fan. I'm so glad we painted it blue. I'm sure I'll update his room again so stay tuned.

Workout Wednesday

Today I did The Biggest Loser The Workout 30 day jump start DVD. I did three 10 minute workouts that focused on abs and upper body. I also did cardio 1. Not bad! The cardio 1 was actually challenging. I decided to do the same DVD on Saturday since I do have it for a week. Side note...you can rent DVDs from the library for a week. Anyway, it was fun. I love doing a different workout each week. I love the surprises.
